In commemoration of World One Health Day, we decided to develop a workshop focused on the implementation and evaluation of Good Manufacturing Practices and Standard Operating Procedures for Sanitation in slaughterhouses as essential elements in the implementation of pathogen reduction programs in HACCP (Hazard Analysis and Critical Control Points) systems with a One Health approach to obtaining safe food, hence the importance of the execution of prerequisite programs for the functioning of sanitary quality systems and their positive impact on One Health.
